Drinking water treatment is mandatory, as also indicated in the user manual,
for the construction safety of the oven. The limestone contained in
the untreated water, over time damages the resistances that heat the cooking
chamber: their thermal output decreases, as the limestone acts as a thermal
insulator, lengthening the cooking times of culinary preparations.

Combi ovens (steam + convection) use to transform water into steam,
this process leaves the salts that are normally dissolved in water as a residue;
among the most important in terms of quantity is limestone, which
is deposited inside the cooking chamber, or in the boiler where present.

If not removed, these accumulations lead to a reduction in the performance
of the oven, up to causing failures. Large accumulations of limescale inside
the cooking chamber, due to the expansion due to heating, can detach and
end up directly on the food, causing losses in the taste characteristics.

To prevent these inconveniences, Tecnoeka recommends treating
the water entering the oven with a softener.
